Method

For the Filet Mignon

    Prepare the Steak

    Season the filet mignon with salt and black pepper on both sides. Let it sit at room temperature for 30 minutes.

    Sear the Steak

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon and sear for 4-5 minutes on each side until a crust forms.

    Baste with Butter

    Add the unsalted butter, thyme, and garlic cloves to the skillet. Once the butter is melted, tilt the skillet and use a spoon to baste the steak with the melted butter for an additional 2-3 minutes until desired doneness.

    Rest the Steak

    Remove the filet mignon from the skillet and let it rest for at least 5 minutes before serving.

For the Truffle Mashed Potatoes

    Boil the Potatoes

    Peel and cut the Yukon Gold potatoes into chunks. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the unsalted butter, heavy cream, truffle oil, salt, and black pepper. Mash until smooth and creamy, adjusting seasoning as needed.

For the Grilled Asparagus

    Prepare the Asparagus

    Trim the tough ends off the asparagus spears. In a bowl, toss asparagus with olive oil, salt, and black pepper.

    Grill the Asparagus

    Preheat the grill to medium-high heat. Grill the asparagus for 3-4 minutes, turning occasionally, until tender and slightly charred.

For the Foie Butter

    Prepare Foie Butter

    In a small bowl, blend the foie gras with unsalted butter and salt until smooth. Refrigerate until ready to use.
