For the Filet Mignon

Prepare the Steak
Season the filet mignon with salt and black pepper on both sides. Let it sit at room temperature for 30 minutes.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon and sear for 4-5 minutes on each side until a crust forms.

Baste with Butter
Add the unsalted butter, thyme, and garlic cloves to the skillet. Once the butter is melted, tilt the skillet and use a spoon to baste the steak with the melted butter for an additional 2-3 minutes until desired doneness.

Rest the Steak
Remove the filet mignon from the skillet and let it rest for at least 5 minutes before serving.
For the Truffle Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return them to the pot. Add the unsalted butter, heavy cream, truffle oil, salt, and black pepper. Mash until smooth and creamy, adjusting seasoning as needed.

In a small bowl, blend the foie gras with unsalted butter and salt until smooth. Refrigerate until ready to use.
