Cook the Chicken
In a skillet over medium heat, cook the chicken until it is golden brown and cooked through, about 6-7 minutes per side. Remove from heat, shred the chicken, and set aside.

Scramble the Eggs
In a bowl, whisk the eggs until fully combined. In a non-stick skillet over medium heat, scramble the eggs until they are fluffy and fully cooked, approximately 3-4 minutes.

Cook the Sausage
In a separate skillet, cook the sausage over medium heat until browned and fully cooked, about 5-6 minutes. Drain excess fat if necessary.

In a small saucepan, heat the jalapeno gravy over low heat until warm, stirring occasionally.

Assemble the Tacos
In each taco shell or chip, layer your choice of meat (chicken or pulled pork), scrambled eggs, and sausage. Drizzle with jalapeno gravy and top with shredded cheese.
