    Prepare the Potatoes

    Begin by peeling and washing the Russet potatoes. Cut them into quarters and place them in a large pot filled with water.

    Boil the Potatoes

    Bring the pot of water to a boil over medium-high heat. Once boiling, reduce the heat and let the potatoes simmer for about 10-15 minutes, or until they are tender but not falling apart.

    Drain and Dry

    Drain the potatoes in a colander and let them cool for a few minutes. Once cool enough to handle, use a clean kitchen towel to pat them dry and remove any excess moisture.

    Mash the Potatoes

    Using a potato masher, mash the potatoes in a large mixing bowl until smooth. Avoid over-mashing to keep some texture.

    Combine Ingredients

    Add salt, garlic powder, onion powder, black pepper, all-purpose flour, and the egg to the mashed potatoes. Mix until well combined. If using, fold in the chopped chives.

    Using your hands, shape the potato mixture into small logs or balls, about 1-2 inches in size. Place them on a baking sheet lined with parchment paper.
