    Prepare the Tartar Sauce

    In a medium bowl, combine mayonnaise, finely chopped pickles, and lemon juice. Mix well until all ingredients are thoroughly combined. Adjust seasoning with salt and pepper to taste. Optionally, add chopped parsley for extra flavor.

    Prepare the Flounder

    In a shallow dish, mix all-purpose flour, cornstarch, salt, and black pepper. In another dish, beat the eggs. In a third dish, place the breadcrumbs.

    Bread the Flounder

    Dredge each flounder fillet in the flour mixture, shaking off the excess. Dip into the beaten eggs, allowing the excess to drip off, then coat with breadcrumbs, pressing gently to adhere.

    Heat the Oil

    In a large frying pan, heat vegetable oil over medium-high heat until shimmering, about 350°F (175°C).

    Fry the Flounder

    Carefully add the breaded flounder fillets to the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Plate the fried flounder, serve with homemade tartar sauce on the side, and garnish with lemon wedges. Pair with your choice of two sides.
