    Prepare the Sirloin

    Season the 10 oz sirloin steak with salt and black pepper on both sides. Preheat a grill or skillet over medium-high heat.

    Cook the Sirloin

    Place the seasoned sirloin on the grill or skillet and cook for about 4-5 minutes on each side for medium-rare. Adjust the time according to your desired doneness. Once cooked, let it rest for 5 minutes before slicing.

    Cook the Eggs

    In a separate pan, heat a little butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (fried or scrambled). Season with salt and pepper.

    Prepare Tater Tots

    Cook tater tots according to package instructions until crispy and golden brown. Set aside.

    Cook the Bacon

    In the same pan used for the eggs, add the bacon strips and cook until crispy. Remove and drain on paper towels.

    Make Sausage Jalapeno Gravy

    In a medium saucepan over medium heat, crumble and cook the sausage until browned. Remove the sausage and set aside. In the same pan, melt 2 tbsp of butter, then whisk in 1 cup of flour and 1 tsp of baking powder to create a roux. Gradually add 1 cup of milk, stirring constantly until thickened. Add the cooked sausage and jalapenos to the gravy, stirring to combine. Season with salt and pepper.

    Prepare the Biscuit

    If desired, serve with a biscuit of your choice, either homemade or store-bought, smothered in the sausage jalapeno gravy.

    Assemble the Platter

    On a large plate, place the sliced sirloin steak, fried or scrambled eggs, crispy tater tots, and bacon. Serve with the biscuit and ladle the sausage jalapeno gravy over it.
