Method
Preparing the Chicken Wings

Clean the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, mix the salt, black pepper, garlic powder, and baking powder. Add the chicken wings and toss well to coat them evenly with the seasoning.
Frying the Chicken Wings

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil in batches. Fry for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.

Drain the Wings
Remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
Making the Sauces

Prepare BBQ Sauce
In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until well mixed and simmer for about 10 minutes.

Prepare Buffalo Sauce
In a small saucepan over low heat, melt the butter. Once melted, stir in the hot sauce, garlic powder, and salt until fully combined.
Serving the Wings

Sauce the Wings
Toss the fried wings in your choice of BBQ sauce, Buffalo sauce, or simply sprinkle with Old Bay seasoning.

Serve the wings hot in a basket or bucket. Enjoy with your favorite dipping sauces and sides!
