If using pre-made biscuits, bake according to package instructions. For homemade, preheat your oven to 425°F (220°C), mix together 2 cups of flour, 1 tablespoon of baking powder, and a pinch of salt and butter. Roll out and cut into circles, then bake for 12-15 minutes or until golden brown.

In the same skillet with the leftover bacon grease, add the frozen tater tots and cook according to package instructions, typically around 15-20 minutes, turning occasionally until golden and crispy.

Make the Sausage Jalapeno Gravy
In a separate saucepan, cook the breakfast sausage over medium heat until browned. Add the diced jalapeños and cook for an additional 2 minutes. Sprinkle flour over the sausage and mix well. Slowly stir in the milk, whisking constantly until the mixture thickens (about 5 minutes). Season with salt and pepper to taste.
