Prepare the Chips
Spread the tortilla chips in an even layer on a large baking sheet.

Make the Cheez Sauce
In a medium saucepan over medium heat, combine cheddar cheese, cream cheese, milk, jalapeño juice, garlic powder, and salt. Stir continuously until the cheese is melted and the mixture is smooth. Remove from heat and set aside.

Cook the Chili
In a large skillet, brown the ground beef over medium heat. Add chopped onion and minced garlic, cooking until the onion is translucent. Drain excess fat, then stir in kidney beans, diced tomatoes, chili powder, salt, and black pepper. Simmer for about 15 minutes until heated through.

Assemble the Nachos
Preheat the oven to 350°F (175°C). Layer the tortilla chips on a serving platter. Spoon the chili mixture generously over the chips, followed by the cheez sauce. Top with sliced jalapeños, chopped green onions, chipotle ranch dressing, and dollops of sour cream.

Place the assembled nachos in the preheated oven for about 10 minutes until everything is warm and the chips are slightly crispy.
