Prepare the Biscuit Dough
Make a well in the center and pour in the milk. Stir gently until just combined. Do not overmix.

Shape the Biscuits
Use a biscuit cutter or a glass to cut out biscuits from the dough. Place them on a baking sheet lined with parchment paper.

Bake the Biscuits
Bake in the preheated oven for about 12-15 minutes, or until the tops are golden brown. Remove from the oven and set aside.

Cook the Sausage
In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Add Jalapenos
Finely chop the jalapenos and add them to the skillet. Cook for an additional 2-3 minutes until they soften.

Make the Gravy
Gradually whisk in the milk, stirring constantly until the mixture thickens and comes to a gentle boil. Season with salt, black pepper, and red pepper flakes to taste.

Assemble the Dish
On a plate, split the biscuits in half. Place the cooked eggs on top and generously ladle the sausage jalapeno gravy over the biscuits and eggs. Sprinkle shredded cheese on top.
