Prepare the Flounder
Cut the flounder fillets into bite-sized pieces, about 1-2 inches each. Pat them dry with paper towels to ensure they fry crisp.

Set Up the Breading Station
In three separate shallow bowls, place the all-purpose flour in the first bowl, whisk the eggs in the second bowl, and combine the panko breadcrumbs with salt, black pepper, paprika, and garlic powder in the third bowl.

Bread the Flounder
Coat each piece of flounder in flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, then roll it in the seasoned panko breadcrumbs until fully coated. Set aside on a plate.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Serve the flounder nuggies hot with a side of chipotle ranch dressing for dipping and lemon wedges for garnish.
