Prepare the Black Beans
In a saucepan, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

Cook the Eggs
In a non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes for over-easy eggs.

Warm the Tortillas
In another skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Dish
On each plate, layer the warmed corn tortillas. Spoon the warmed black beans over the tortillas, followed by the fresh curd and salsa ranchero. Top with the cooked eggs and sprinkle with cotija cheese. Add braised pork or avocado as a side.
