Prepare the batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the beer while whisking until the batter is smooth and thick.

Heat the oil
In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the curds
Dip each Ballard cheddar curd into the batter, ensuring it is fully coated.

Fry the curds
Carefully drop the battered curds into the hot oil. Fry in batches for about 3-4 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Serve the beer battered curds hot with drive-in sauce for dipping.
