    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the Russet potatoes under running water and dry them thoroughly. Prick each potato several times with a fork.

    Bake the Potatoes

    Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork.

    Scoop out the Flesh

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the flesh, leaving about 1/4 inch of potato on the skin.

    Prepare the Skins

    Brush the insides of the potato skins with olive oil and sprinkle with salt. Place them cut-side up on a baking sheet.

    Bake the Skins

    Return the potato skins to the oven and bake for an additional 10-15 minutes or until crispy.

    Remove the potato skins from the oven and sprinkle each with shredded cheddar cheese, crumbled bacon, and chopped green onions.

    Return the loaded potato skins to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
