Method

Preparing the Rice

  1. 1

    Rinse the Rice

Place the brown rice in a fine-mesh strainer and rinse under cold water until the water runs clear.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed brown rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

While the rice is cooking, chop the bell pepper, carrot, zucchini, and green onions into bite-sized pieces. Cut the broccoli into small florets.

  2. 4

    Sauté the Vegetables

In a large skillet, heat a splash of water or a little oil over medium heat. Add the chopped vegetables (bell pepper, carrot, broccoli, zucchini) and cook for about 5-7 minutes, stirring frequently, until they are tender but still vibrant in color. Add the green onions during the last minute of cooking.

Making the Sauce

  1. 5

    Combine Sauce Ingredients

In a small bowl, whisk together the soy sauce, sesame oil, honey (or maple syrup), minced garlic, and grated ginger until well combined.

Assembling the Bowl

  1. 6

    Combine Everything

Once the rice is cooked and the vegetables are sautéed, fluff the rice with a fork and divide it into serving bowls. Top each bowl with the sautéed vegetables and drizzle the sauce over the top.

  2. 7

    Add Toppings

Finish each bowl with sliced avocado and a sprinkle of sesame seeds.
