Thyme Simple Syrup

Prepare the Thyme Simple Syrup

In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved.

Infuse with Thyme

Add 5 sprigs of fresh thyme to the saucepan. Reduce the heat to low and let it simmer for an additional 5 minutes to infuse the thyme flavor.

Cool and Strain

Remove the saucepan from heat and let the syrup cool to room temperature. Once cooled, strain the syrup through a fine mesh sieve to remove the thyme sprigs. Store in a sealed container in the refrigerator until ready to use.

Combine Ingredients

In a cocktail shaker, add 2 oz of Hendricks Gin, 1 oz of blueberry syrup, 0.5 oz of fresh lemon juice, and 1 oz of the prepared thyme simple syrup.

Shake with Ice

Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.

Strain into Glass

Strain the mixture into a highball glass filled with ice.

Top with Club Soda

Top the cocktail with 3 oz of club soda for a refreshing fizz.

Garnish and Serve

Garnish with a sprig of fresh thyme and a few blueberries, if desired. Serve immediately.
