Dough Preparation

Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt.

Add Wet Ingredients

Add water and oil to the flour mixture. Mix until the dough begins to form.

Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth.

Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

Cook the Filling

In a skillet, heat a tablespoon of oil over medium heat. Add chopped onions and minced garlic, and sauté until soft.

Add Meat and Spices

Add the ground beef or lamb to the skillet. Cook until browned. Stir in cilantro, cumin, paprika, salt, and pepper. Mix well and cook for another 5 minutes.

Cool the Filling

Remove the skillet from heat and let the filling cool to room temperature.

Roll Out the Dough

After the dough has rested, divide it into two equal parts. Roll each part out on a floured surface until thin.

Cut and Fill

Cut each rolled dough into circles (about 5 inches in diameter). Place a tablespoon of filling in the center of each circle.

Seal the Sambusa

Fold the dough over the filling to form a half-moon shape. Press the edges to seal, using a bit of water if necessary.

Fry the Sambusa

In a deep frying pan, heat oil over medium heat. Fry the sambusa until golden brown, about 3-4 minutes per side. Drain on paper towels.
