Preparation

    Slice the Vegetables

    Thinly slice the bell peppers and onions and set aside.

    Prepare the Roast Beef

    Slice the roast beef into thin strips and set aside.

Cooking

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 10-15 minutes until the onions are golden brown and caramelized. Remove and set aside.

    Cook the Bell Peppers

    In the same skillet, add the remaining tablespoon of olive oil and the sliced bell peppers. Season with salt and pepper. Cook for about 5-7 minutes until the peppers are tender. Remove from heat.

    Combine Ingredients

    Add the sliced roast beef to the skillet with the bell peppers and mix gently. Cook for another 2-3 minutes until the beef is heated through.

Assembly

    Assemble the Sandwiches

    Slice the hoagie rolls lengthwise but not all the way through. Place a generous portion of the beef and pepper mixture into each roll and top with 2 slices of provolone cheese.

    Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes until the cheese is melted and bubbly.
