Method

Preparing Roasted Yukon Gold Taters

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Potatoes

Wash and dice the Yukon Gold potatoes into small cubes.

  3. 3

    Season the Potatoes

In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, fresh rosemary, salt, and black pepper until evenly coated.

  4. 4

    Roast the Potatoes

Spread the seasoned potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, stirring halfway through.

Cooking the Eggs

  1. 5

    Heat the Pan

In a non-stick skillet, melt the butter over medium heat.

  2. 6

    Cook the Eggs

Crack the eggs into the skillet. For sunny-side up, cook until the whites are set; for over-easy, flip the eggs carefully and cook for another minute. Season with salt and black pepper.

Cooking the Protein

  1. 7

    Cook the Bacon or Sausage

In a separate pan, cook the bacon or sausage over medium heat until crispy and browned, about 5-7 minutes for bacon and 10-12 minutes for sausage links.

Plating

  1. 8

    Serve

On a plate, serve the roasted Yukon Gold taters, eggs cooked to your preference, and the choice of bacon or sausage.
