Method
Dough (Neapolitan style)
Activate yeast
In a small bowl, dissolve the sugar in 1/4 cup of the water (from measured amount). Sprinkle the active dry yeast over the water, stir gently, and let sit 5–10 minutes until foamy.
Mix dough
In a large mixing bowl or stand mixer fitted with a dough hook, combine the flour and salt. Add the yeast mixture, the remaining water gradually, and the olive oil. Mix on low speed (or stir with a wooden spoon) until a shaggy dough forms, then knead 6–8 minutes by hand or 4–6 minutes in the mixer until the dough is smooth and slightly tacky but not sticky.
Portion dough
After rising, divide the dough into 4 equal portions for 10–11 inch pizzas. Shape each portion into a tight ball, cover, and let rest 30–45 minutes at room temperature before stretching.
Base & spreads (choose per pizza)
Prepare spreads
Warm the Nutella or chocolate spread gently (microwave in 10–15 second bursts, stirring) to make it easy to spread. Whisk mascarpone with 1 tablespoon honey until smooth and slightly loose. Stir the ricotta with lemon zest and remaining 2 tablespoons honey to taste. Keep dulce de leche at room temperature or warm slightly so it is spreadable. If using berry compote, ensure it is thick but spoonable.
For each dessert pizza, after stretching the dough and baking (see next section), spread one of the chosen bases thinly and evenly across the hot crust: about 1/4–1/3 cup Nutella or 3–4 tablespoons mascarpone mixture, or 3–4 tablespoons ricotta mixture, or 2–3 tablespoons dulce de leche, or 3–4 tablespoons berry compote. Do not overload to avoid sogginess.
Baking & assembly
Preheat wood-fired oven or home oven
If using a wood-fired oven, heat to 700–900°F (370–480°C) for Neapolitan-style quick bake. If using a home oven, preheat to the highest setting (500–550°F / 260–290°C) with a pizza stone or steel in place for at least 45 minutes.
Stretch dough
On a lightly floured surface, flatten one dough ball gently with your fingertips, then stretch into a 10–11 inch round leaving a slightly thicker outer rim. Transfer to a well-floured pizza peel or parchment for home oven use.
Bake
For wood-fired oven: slide pizza onto the hearth and cook 60–90 seconds, rotating frequently so it cooks evenly, until the crust is blistered and charred in spots. For home oven on stone/steel: bake 5–8 minutes, rotating halfway, until crust is golden and blistered.
Remove the pizza from the oven and allow to rest 30–60 seconds before adding cool or room-temperature toppings to avoid melting things that should remain fresh.
Assemble toppings
Spread the chosen base (see Base & spreads) evenly over the hot crust. Arrange fruit (strawberries, bananas, peaches, blueberries) attractively. Sprinkle toasted almonds or chopped hazelnuts, then shave dark chocolate over the top. Drizzle with caramel, warm ganache, or balsamic glaze as desired. Finish with a light dusting of powdered sugar, a few fresh mint leaves, and a very light pinch of sea salt flakes if using.
Finishing touches & serving
Slice the dessert pizza into 6–8 wedges. Serve immediately while crust is still slightly warm and spreads are soft. Offer extra sauces (caramel, chocolate) on the side for drizzling.
Leftover slices can be refrigerated up to 48 hours; reheat briefly in a 350°F oven for 3–5 minutes to refresh the crust (avoid microwaving to preserve texture).
