Prepare the lime

Wash the lime. Cut off the ends, then cut the lime into 8 wedges (quartered, then each quarter halved). If you prefer less bitterness, remove the central pith before cutting.

Muddle lime and sugar

Place the lime wedges in a sturdy old-fashioned glass or a shaker. Add 2 tsp granulated sugar. Using a muddler (or the back of a wooden spoon), press and twist firmly 8–12 times to release juice and oils from the peel without pulverizing the peel into tiny bits. Aim to dissolve most of the sugar into the lime juice and zest.

Add cachaça

Pour 2 oz (60 ml) of good-quality cachaça over the muddled lime and sugar. Give the mix a quick stir to combine and help any remaining sugar dissolve.

Add ice and finish

Fill the glass with crushed ice or cubed ice to roughly 1 cup. Stir briskly for 10–15 seconds to chill and slightly dilute the cocktail, or if using crushed ice, lightly smash to mound the ice on top.

Garnish and serve

Garnish with a lime wheel or wedge. Serve with a short stirring spoon or straw. If desired, add a small splash of club soda on top for a lighter finish.

Use simple syrup

If you prefer a smoother, fully dissolved sweetness, substitute 2 tsp granulated sugar with 1/2 tsp simple syrup. Add the syrup after muddling or skip muddling sugar entirely and gently muddle only to release lime oils.

Fruit variations

For flavored caipirinhas, add 2 tablespoons of chopped fresh fruit (strawberries, pineapple, passionfruit pulp) to the glass with the lime before muddling. Muddle together with the lime and sugar until fruit is broken down and combined, then proceed with cachaça, ice, and finishing steps.

Batching multiple cocktails

To make a pitcher (6 servings), multiply ingredients by six: 12 oz cachaça, 6 limes (cut and lightly muddled), 12 tsp sugar (or 6 tsp simple syrup), and about 6 cups ice. Muddle limes and sugar in a large pitcher, add cachaça, stir, then add ice and serve immediately in individual glasses.

Caipirinhas are best served immediately while ice is cold and lime aroma is fresh. Use high-quality cachaça and ripe limes for the best balance of bright acidity and vegetal sugar-cane spirit flavor.
