Prepare the Home Fries

Dice potatoes and boil them until tender. Drain and pan-fry in a skillet with oil until crispy. Season with salt and pepper.

Cook the Meats

In a skillet, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, cook the chorizo until browned, then add the carnitas to heat through.

Make the Omelette

In a bowl, whisk together eggs. In a non-stick skillet, pour in the eggs and cook on low heat. Once the edges begin to set, add the cooked meats, shredded cheese, and smoked charro beans.

Finish the Omelette

Fold the omelette in half and cook until the cheese is melted and the eggs are fully cooked. Serve topped with beer cheese, espuma dressing, aji amarillo, and red pickled cabbage.
