Prepare the Marinade
In a bowl, combine olive oil, lemon juice, minced garlic, sea salt, black pepper, and aji amarillo paste. Mix well.
Marinate the Octopus
Place the octopus in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 2 hours, or overnight for better flavor.
Preheat the Grill
Preheat your grill to medium-high heat.
Grill the Octopus
Remove the octopus from the marinade and let excess marinade drip off. Grill the octopus for about 3-4 minutes per side, until nicely charred.
Prepare the Pickled Onion
Slice red onions thinly and soak them in a mixture of vinegar, water, and a pinch of salt for at least 30 minutes.
Assemble the Dish
Slice the grilled octopus into pieces. Serve it on a plate topped with pickled onions, fresh tomato slices, and chopped cilantro.
