Prepare eggplant
Peel the eggplants if desired and cut into roughly 1/2-inch dice. Sprinkle with 1/2 teaspoon kosher salt, place in a colander, and let sit 15 minutes to draw out bitterness. Rinse briefly and pat dry with paper towels.

Sauté aromatics
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add sliced red onion and diced celery and cook until softened, about 5 minutes. Add minced garlic and red pepper flakes and cook another 30–45 seconds until fragrant.

Cook eggplant
Add remaining 1 tablespoon olive oil and the diced eggplant to the pan. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Sauté, stirring occasionally, until the eggplant is tender and lightly browned, about 8–10 minutes. If the pan dries, add a splash of water.

Combine vegetables
Stir in the diced tomato, capers, and chopped green olives. Cook until the tomato breaks down and the mixture is cohesive, about 4–5 minutes. Remove from heat and let cool slightly (5 minutes) before whipping.

Spicy Agrodolce (sweet-sour glaze)

While the caponata cools, make the agrodolce: in a small saucepan combine red wine vinegar, brown sugar, honey, water, red chili paste, and lemon zest. Bring to a gentle simmer over medium heat and cook until slightly thickened and glossy, about 4–6 minutes. Taste and adjust heat or sweetness as desired. Remove from heat and let cool slightly.

Drizzle 2 tablespoons of the warm agrodolce into the whipped caponata; pulse briefly to incorporate. Reserve about 1 tablespoon of agrodolce for finishing. Taste and adjust — add more if you like a tangier/sweeter bite.
Finishing & Serving

Transfer the whipped caponata to a serving bowl. Stir in 1 tablespoon extra-virgin olive oil and 1 tablespoon lemon juice for brightness. Sprinkle the reserved agrodolce on top in a thin stream for visual contrast. If using, scatter crumbled ricotta salata or feta and an additional teaspoon of toasted pine nuts.

Serve at room temperature with toasted bread or crackers. Caponata can be made ahead and chilled — bring to room temperature before serving and drizzle the reserved agrodolce and olive oil just before presenting.
