    Chill glass and ingredients

    Place a large wine glass or rocks glass in the freezer for 5–10 minutes, or fill with ice and let sit while you prepare other components, then discard that ice before assembling. Ensure Prosecco and soda are well chilled.

    Build the Spritz

    Fill the chilled glass about two-thirds full with fresh ice cubes. Pour 2 oz Aperol (or Sicilian bitter orange liqueur) over the ice, then add 0.5 oz fresh blood orange juice if using for a Sicilian twist. If you prefer slightly sweeter, add 0.25 tsp simple syrup now.

    Add sparkling components

    Pour 3 oz well-chilled Prosecco into the glass gently to preserve bubbles. Top with 1 oz chilled soda water. Stir once gently with a bar spoon β€” just one slow turn to combine without flattening the Prosecco.

    Taste and adjust

    Taste the spritz and adjust sweetness or bitters by adding a tad more simple syrup (in 1/8 tsp increments) or an extra splash (0.25 oz) of blood orange juice if desired. If you add, stir once more gently.

Garnish

    Thread a blood orange wheel onto the rim of the glass or float it on top. Clap a mint sprig between your palms once to release aromatics and tuck it beside the orange or rest it on the ice. Serve immediately with a short straw or stirrer.
