    Prepare vegetables

    Trim and cut the eggplants into 1/2-inch cubes (should yield about 2 cups). Remove seeds and membranes and dice red bell pepper to 1/2-inch pieces (about 1/2 cup). Finely dice the yellow onion (1/2 cup) and slice celery into thin 1/4-inch pieces (1 cup). Mince 2 garlic cloves.

    Salt the eggplant cubes lightly (about 1/2 tsp) and let sit in a colander for 15 minutes to draw out bitterness, then pat dry with paper towels.

Cook Vegetables

    Sear eggplant

    Heat 3 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add eggplant in a single layer (work in batches if necessary) and cook, stirring occasionally, until golden and softened, about 6–8 minutes per batch. Remove cooked eggplant to a bowl and set aside.

    Soften aromatics

    Add remaining 2 tablespoons olive oil to the same skillet over medium heat. Add diced onion and celery with a pinch of salt and cook until translucent and fragrant, about 4–5 minutes. Add red bell pepper and continue cooking 3 minutes. Stir in minced garlic and cook 30–45 seconds until fragrant.

Agrodolce & Combine

    Make spicy agrodolce

    Push the vegetables to the side of the skillet, add tomato paste and cook briefly 30 seconds to bloom. Add red wine vinegar, granulated sugar, and water, stirring to dissolve sugar and incorporate tomato paste. Add crushed red pepper flakes. Let the mixture simmer gently for 2–3 minutes until slightly reduced and syrupy.

    Combine everything

    Return the cooked eggplant to the skillet along with capers, chopped olives, and toasted pine nuts or walnuts. Stir to coat everything in the agrodolce. Simmer on low for 3–5 minutes to meld flavors. Taste and season with remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper, adjusting to preference.

Finish & Serve

    Remove from heat and stir in fresh chopped parsley and 1 tablespoon lemon juice. Allow the caponata to cool to warm or room temperature — flavors deepen as it rests for at least 30 minutes. Serve at room temperature or chilled with crusty bread, polenta, or as a side to grilled protein.

    Store leftover caponata in an airtight container in the refrigerator for up to 5 days; flavors will continue to develop.
