    In a large pot, melt the butter over medium heat. Stir in the flour to create a roux, cooking until it turns a light brown color, about 15 minutes.

    Add Vegetables

    Add the chopped onion, celery, green bell pepper, and garlic to the roux. Cook for about 5 minutes until the vegetables are soft.

    Combine Broth and Seasonings

    Gradually whisk in the chicken broth, ensuring there are no lumps. Stir in the tomato paste, bay leaves, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer.

    Add Crawfish

    Once simmering, add the crawfish tails and let the bisque simmer for an additional 20 minutes, stirring occasionally.

    Remove bay leaves before serving. Serve the bisque hot over cooked white rice.
