    Prepare the Potatoes

    Peel and grate the Russet potatoes using a box grater or food processor. Rinse the grated potatoes under cold water to remove excess starch and then drain well.

    Squeeze Excess Water

    Place the grated potatoes in a clean kitchen towel and twist to squeeze out as much moisture as possible.

    Mix Ingredients

    In a large bowl, combine the grated potatoes, chopped onion, shredded cheddar cheese, salt, and black pepper. Mix until well combined.

    Cook the Hash Browns

    Heat vegetable oil in a large skillet over medium heat. Once hot, add the potato mixture in an even layer. Cook for about 5-7 minutes until the bottom is golden brown.

    Flip and Cook Again

    Carefully flip the hash browns over using a large spatula. Cook for another 5-7 minutes until the other side is golden brown and crispy.

    Serve

    Once cooked, remove from skillet, let cool for a minute, then slice and serve hot.
