    Prepare the Eggplant

    Slice the eggplant into 1/4 inch thick rounds. Sprinkle both sides with salt and let them sit for 30 minutes to draw out moisture. Rinse and pat dry with paper towels.

    Set Up Breading Station

    Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Eggplant

    Dredge each eggplant slice in flour, then dip in beaten eggs, and finally coat with breadcrumbs. Set aside.

    Fry the Eggplant

    In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded eggplant slices in batches, about 3-4 minutes per side, or until golden brown. Remove and drain on paper towels.

    Serve

    Heat the marinara sauce in a saucepan. Serve the fried eggplant hot, topped with marinara sauce, grated Parmesan cheese, and fresh basil.
