    Preparation

    Remove the filet mignon from the refrigerator and let it rest at room temperature for about 30 minutes. This ensures even cooking.

    Season

    Generously season both sides of the filet mignon with salt and black pepper.

    Sear the Steak

    In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat. Once hot, add the filet mignon and sear for 3-4 minutes on each side for medium-rare.

    Add Flavor

    In the last 2 minutes of cooking, add butter, garlic, and rosemary/thyme to the pan. Use a spoon to baste the filet mignon with the melted butter.

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
