    Prepare the Steak

    Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. This allows for even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Pat the seasoning into the meat.

    Heat the Pan

    In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Carefully place the ribeye in the hot skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

    Flip and Add Flavor

    Flip the steak and add the fresh rosemary and garlic cloves to the pan. Sear for an additional 4-5 minutes for medium-rare, basting with the pan juices.

    Check Doneness

    Use a meat thermometer to check the internal temperature. It should read about 130°F (54°C) for medium-rare.

    Remove the steak from the skillet and let it rest on a cutting board for 10 minutes before slicing. Serve with your favorite sides.
