    Take the bone-in filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub the steak with olive oil, and season generously with kosher salt and black pepper on both sides.

    Preheat the Grill or Pan

    Preheat your grill or cast-iron skillet over high heat for about 5 minutes.

    Sear the Steak

    Once hot, place the steak on the grill or skillet and sear for about 4-5 minutes on one side without moving it.

    Flip and Add Aromatics

    Flip the steak and add garlic cloves, fresh rosemary, and butter to the pan. Sear for another 4-5 minutes for medium-rare, basting with butter.

    Check for Doneness

    Use a meat thermometer to check for doneness (130°F for medium-rare). Cook longer if desired.
