    Prepare the Ingredients

    Gather all the ingredients. Rinse the shrimp under cold water and pat dry. Dice the pancetta, halve the grape tomatoes, chop the scallions, and slice the mushrooms. Mince the garlic.

Cooking

    Cook the Pancetta

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Vegetables

    In the same skillet, add the chopped scallions, sliced mushrooms, and minced garlic. Sauté for about 3-4 minutes until the mushrooms are tender and the garlic is fragrant.

    Add Tomatoes and Wine

    Add the halved grape tomatoes to the skillet and stir to combine. Pour in the white wine and bring the mixture to a simmer. Allow to cook for about 5 minutes until the wine reduces slightly.

    Cook the Shrimp

    Return the crispy pancetta to the skillet and add the shrimp. Season with salt and black pepper. Cook for about 3-4 minutes, stirring occasionally, until the shrimp are pink and opaque.

    Finish with Butter

    Remove the skillet from heat and stir in 2 tablespoons of butter until melted and well combined. Adjust seasoning if necessary.

Serving

    Plate the Dish

    Serve the shrimp scampi immediately, garnished with chopped fresh parsley and lemon wedges, if desired. Enjoy!
