Preparation

    Prepare the Seafood

    Rinse the shrimp, scallops, mussels, and clams under cold water. Remove any beards from the mussels and scrub the shells of the clams and mussels.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Chop Vegetables

    Finely chop the garlic and sun-dried tomatoes. Roughly chop the fresh basil and rinse the spinach.

Cooking

    Sauté Garlic and Sun-Dried Tomatoes

    In a large skillet, heat olive oil over medium heat. Add the chopped garlic and sauté for 1 minute until fragrant. Then add the sun-dried tomatoes and cook for another 2 minutes.

    Add Seafood

    Add the shrimp, scallops, mussels, and clams to the skillet. Pour in the white wine, cover the skillet, and let it simmer for 5-7 minutes, or until the mussels and clams open.

    Add Spinach and Season

    Stir in the spinach, chopped basil, salt, and pepper. Cook for an additional 2-3 minutes until the spinach wilts.

    Combine with Pasta

    Add the cooked spaghetti to the skillet with the seafood mixture. Toss everything together, adding reserved pasta water as needed to create a sauce.

Serving

    Plate the Dish

    Serve the Seafood Pomodoro hot, garnished with extra basil if desired. Enjoy!
