Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

Bake the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool while preparing the filling.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the granulated sugar and mix until combined. Add the sour cream and vanilla extract, mixing well.

Add eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Remove from the oven and allow to cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

Make the caramel
In a medium saucepan over medium heat, add the granulated sugar. Stir continuously until the sugar melts and turns a golden brown color.

Add butter and cream
Once the sugar is melted, carefully add the unsalted butter and stir until melted. Slowly pour in the heavy cream while stirring, and continue to cook for another 1-2 minutes until the sauce thickens. Remove from heat and stir in the sea salt.

Transfer the caramel sauce to a jar and let it cool to room temperature.

Prepare the topping
Once the cheesecake has chilled, whip the heavy cream until stiff peaks form. Spread the whipped cream evenly over the top of the cheesecake.

Drizzle the cooled salted caramel sauce over the whipped cream topping, and sprinkle with sea salt and chocolate shavings.
