Cook the Penne Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Vegetables
Add the artichoke hearts, spinach, roasted red peppers, sun-dried tomatoes, and capers to the skillet. Sauté for about 5-7 minutes until the spinach is wilted and the vegetables are heated through.

Deglaze with White Wine
Pour in the white wine and stir to combine, scraping any bits from the bottom of the skillet. Allow the mixture to simmer for about 3-5 minutes until the wine reduces slightly.

Combine with Pasta
Add the cooked penne pasta to the skillet and toss to combine. Season with salt and black pepper to taste.

Serve
Remove from heat, stir in the grated Parmesan cheese, and serve hot, garnished with additional Parmesan if desired.
