Salad Preparation

Prepare the Prosciutto
Preheat your oven to 200°C (400°F). Lay the prosciutto slices on a baking sheet lined with parchment paper. Bake for about 10-15 minutes, or until crispy. Remove and let cool.

Slice the Pear
While the prosciutto is baking, wash and slice the pears into thin wedges. Set aside.

Prepare the Onion
Peel and thinly slice the red onion. If you prefer a milder flavor, soak the slices in cold water for 10 minutes, then drain.

Assemble the Salad
In a large serving bowl, combine the arugula, pear slices, red onion, crumbled gorgonzola cheese, and candied pecans.

Add Prosciutto
Break the crispy prosciutto into bite-sized pieces and add it to the salad.
Honey Vinaigrette Preparation

In a small bowl, whisk together honey, olive oil, apple cider vinegar, and Dijon mustard until well combined. Season with salt and black pepper to taste.
