Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Mix Crust Ingredients
In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.
Cheesecake Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Vanilla
Add the granulated sugar and vanilla extract to the cream cheese. Beat until well combined.

Incorporate Sour Cream and Eggs
Add the sour cream and mix until smooth. Then, add the eggs one at a time, mixing on low speed after each addition until just combined.

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.

Prepare Strawberries
In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.

Let the mixture sit for about 15-20 minutes to allow the strawberries to release their juices.

Once the cheesecake is chilled, top it with the macerated strawberries before serving.
