Prepare the Tomatoes
Wash the plum tomatoes thoroughly. Cut them in half lengthwise and remove the seeds. This will make the sauce less watery.

Chop the Garlic
Peel the garlic cloves and finely mince them. This will enhance the flavor of the dish.

Prepare the Basil
Rinse the fresh basil leaves under cold water. Pat them dry with a paper towel. Tear the leaves into smaller pieces to release their aroma.

Slice the Cheese
Slice the Italian cheese (mozzarella) into thin rounds. This will help it melt evenly on the dish.

Cook the Tomatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved plum tomatoes cut-side down and cook for about 5-7 minutes until they are soft and start to caramelize.

Add Garlic and Basil
Once the tomatoes are cooked, add the minced garlic and cook for an additional 1-2 minutes until fragrant. Then, add the torn basil leaves and stir to combine.

Add Cheese
Reduce heat to low. Place the sliced mozzarella cheese over the tomato mixture. Cover the skillet with a lid and let it cook for about 5 minutes until the cheese melts.

Finish with Olive Oil
Drizzle the remaining tablespoon of olive oil over the dish before serving to enhance the flavor.
