Method
Preparing the Mussels

Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any sand or debris. Remove the beards by pulling them off.

Cook the Mussels
In a large pot, heat the white wine over medium heat. Add the minced garlic and diced shallots. Cook until the shallots are translucent, about 3-4 minutes.

Add the Mussels
Add the cleaned mussels to the pot, cover with a lid, and steam for about 5-7 minutes or until the mussels open up. Discard any mussels that do not open.

Garnish
Sprinkle the chopped parsley over the mussels before serving.
Making the Lemon & White Butter Sauce

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat.

Add Lemon Juice and Zest
Once the butter is melted, stir in the lemon juice and lemon zest. Cook for an additional minute.

Season the Sauce
Season with salt and black pepper to taste before serving. Drizzle over the mussels.
Making the Spicy Marinara

Add the Crushed Tomatoes
Stir in the canned crushed tomatoes and bring to a simmer.

Season the Marinara
Add red pepper flakes, dried oregano, salt, and black pepper. Stir well and let simmer for 15-20 minutes.

Serve with Mussels
Serve the spicy marinara over the cooked mussels. Enjoy!
