Pasta Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil.

Knead and Rest Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Mix Filling Ingredients
In a medium bowl, combine the cooked lobster meat, ricotta cheese, grated Parmesan cheese, chopped parsley, lemon juice, salt, and black pepper.

Prepare Filling
Stir until well combined and set aside.
Ravioli Assembly

Roll Dough
Roll out the rested pasta dough on a floured surface to about 1/16 inch thick.

Cut Pasta Shapes
Cut the dough into squares or circles, approximately 3 inches in diameter.

Fill Pasta
Place a teaspoon of the lobster filling in the center of each pasta shape. Brush the edges with water.

Seal Ravioli
Fold the dough over to create a half-moon shape and press the edges to seal tightly. Repeat with remaining dough and filling.
Sauce Preparation

Sauté Shallots and Garlic
In a large skillet, melt the butter over medium heat. Add the minced shallots and garlic and sauté until softened, about 2-3 minutes.

Add Wine
Pour in the white wine and let it simmer for about 2 minutes to reduce slightly.

Make Sauce
Stir in the heavy cream, salt, and black pepper. Cook for an additional 3-4 minutes until the sauce thickens slightly.
Cooking Ravioli

Cook Ravioli
Bring a large pot of salted water to a boil. Gently drop the ravioli into the boiling water and cook for 3-4 minutes, or until they float to the surface.

Combine with Sauce
Using a slotted spoon, transfer the cooked ravioli to the skillet with the sauce. Toss gently to coat.

Serve hot, garnished with fresh parsley.
