Chocolate Mousse

Method

Prepare the Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. Melt the chocolate using a double boiler method or in the microwave in short bursts, stirring until smooth. Allow to cool slightly.

    Separate the Eggs

    Separate the egg yolks and whites into two different bowls. Make sure no yolk gets into the whites.

    Whip Egg Whites

    Add a pinch of salt to the egg whites and beat them with an electric mixer until soft peaks form. Gradually add the granulated sugar and continue to whip until stiff peaks form.
