Garlic Oil

Method

Prepare Garlic Oil

  1. 1

    Make the Garlic Oil

In a small saucepan, combine the olive oil and minced garlic over low heat. Allow the garlic to infuse the oil for about 10 minutes, stirring occasionally to prevent burning. Remove from heat and let it cool slightly.

Caramelize Onions

  1. 2

    Caramelize the Onions

In a skillet over medium heat, add a tablespoon of the garlic oil and the sliced onions. Cook, stirring frequently, for about 20-25 minutes or until the onions are golden brown and caramelized. Remove from heat and set aside.

Prepare Prosciutto

  1. 3

    Crisp the Prosciutto

Preheat your oven to 400°F (200°C). Lay the prosciutto slices on a baking sheet lined with parchment paper. Bake for about 10-12 minutes or until crispy. Remove from the oven and let cool.

Assemble the Brie

  1. 4

    Assemble and Bake

Preheat your brick oven or conventional oven to 350°F (175°C). Place the brie on a baking dish. Top with caramelized onions, shredded Italian cheeses, and a drizzle of the garlic oil. Bake for 15-20 minutes, or until the cheese is melty and soft.

Serve

  1. 5

    Garnish and Serve

Once the brie is out of the oven, top with cranberry agrodolce, crispy prosciutto, and fresh arugula. Serve immediately with crusty bread or crackers.
