Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

  3. 3

    Add Wet Ingredients

Add the softened butter, milk, and vanilla extract to the dry ingredients. Beat on medium speed until smooth.

  4. 4

    Incorporate Eggs

Add the eggs one at a time, mixing well after each addition. Continue to mix until the batter is well combined.

  5. 5

    Bake the Cakes

Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cakes

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove them from the pans and cool completely on wire racks.

Pastry Cream Filling

  1. 7

    Heat Milk

In a medium saucepan, heat the milk over medium heat until it is steaming but not boiling.

  2. 8

    Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

  3. 9

    Combine and Thicken

Slowly whisk the hot milk into the egg mixture. Then return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened.

  4. 10

    Finish the Cream

Remove from heat and stir in cornstarch, unsalted butter, and vanilla extract until smooth. Transfer to a bowl, cover with plastic wrap directly on the surface, and refrigerate until cool.

Chocolate Ganache

  1. 11

    Heat Cream

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

  2. 12

    Combine with Chocolate

Remove from heat and add the chopped chocolate. Let it sit for a few minutes, then stir until smooth and glossy.

Assembly

  1. 13

    Assemble the Cake

Once the cakes are completely cool, place one layer on a serving plate. Spread the pastry cream filling evenly over the top.

  2. 14

    Add the Second Layer

Place the second cake layer on top of the pastry cream.

  3. 15

    Pour Ganache

Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.

  4. 16

    Chill and Serve

Refrigerate the cake for at least 30 minutes to set the ganache before slicing and serving.
