Prepare Ingredients

Toast the Almonds
Preheat a dry skillet over medium heat. Add the chopped almonds and toast them, stirring frequently, for about 5-7 minutes or until golden brown and fragrant. Remove from heat and let cool.

Peel and thinly slice the red onion. Set aside.

Prepare the Goat Cheese
Crumble the goat cheese into small pieces and set aside.
Make the Dressing

In a small bowl, whisk together the olive oil, honey, apple cider vinegar, salt, and black pepper until well combined. Adjust seasoning to taste.
Assemble the Salad

In a large mixing bowl, add the arugula, sliced red onion, toasted almonds, and dried blueberries. Gently toss to combine.
