Method

Preparing the Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat it dry with paper towels.

    Season the Chicken

    Rub the olive oil all over the chicken. Season generously with salt, black pepper, garlic powder, and paprika.

    Roast the Chicken

    Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Making the Barbecue Sauce

    Combine Ingredients

    In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.

    Cook the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 15 minutes until thickened.

Caramelizing Onions

    Slice Onions

    Peel and slice the yellow onions into thin rings.

    Cook Onions

    In a skillet, melt the butter over medium heat. Add the sliced onions and salt, cooking slowly for about 20-25 minutes, stirring frequently, until the onions are golden brown and caramelized.

Assembling the Dish

    Combine Chicken and Sauce

    Once the chicken is roasted, remove it from the oven and brush a generous amount of barbecue sauce all over the chicken.

    Top with Caramelized Onions and Cheese

    Spread the caramelized onions over the barbecue sauce, then sprinkle the Italian cheese blend on top.
