Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Cook the Manicotti

    In a large pot of boiling salted water, cook the manicotti shells for about 5 minutes, until slightly softened but still firm. Drain and rinse under cold water. Set aside.

    Make the Filling

    In a mixing bowl, combine 15 oz of ricotta cheese, 1 cup of shredded mozzarella cheese, 0.5 cup of grated Parmesan cheese, 1 large egg, 2 tbs of chopped parsley, 0.5 tsp of salt, and 0.25 tsp of black pepper. Mix well until smooth.

    Fill the Manicotti

    Using a spoon or a piping bag, fill each manicotti shell with approximately 2-3 tablespoons of the ricotta filling. Place filled shells in a 9x13 inch baking dish.

    Add Marinara Sauce

    Pour 3 cups of marinara sauce evenly over the filled manicotti shells.

    Top with Cheese

    Sprinkle 1 cup of shredded mozzarella cheese and 0.5 cup of grated Parmesan cheese over the top of the sauce.

Baking

    Bake the Manicotti

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbling and golden.

    Garnish (Optional)

    If desired, sprinkle 2 tbs of chopped fresh basil on top before serving.
