Method
Prepare the Veal

Assemble the Saltimbocca
Place a slice of prosciutto on each veal cutlet and top with two sage leaves. Press down gently to adhere.

Dredge
Lightly dredge each cutlet in flour, shaking off the excess.
Cook the Veal

Heat the Pan
In a large skillet, heat olive oil and butter over medium-high heat.

Sear the Cutlets
Add the veal cutlets to the skillet and cook for 3-4 minutes on each side until golden brown. Remove and keep warm.

Deglaze
Pour in the white wine to deglaze the pan, scraping up any browned bits, and allow it to reduce by half.
Roast the Potatoes

Prepare the Potatoes
Preheat the oven to 200°C (400°F). In a bowl, toss baby potatoes with olive oil, garlic powder, salt, pepper, and rosemary.

Spread the potatoes on a baking sheet and roast for 25-30 minutes or until golden and tender.
