Veal Marsala

Prepare the Veal
Season veal cutlets with salt and pepper. Dredge each cutlet in flour, shaking off excess.

Cook the Veal
In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add veal cutlets and sauté until browned, about 3-4 minutes per side. Remove from skillet and set aside.

Make the Sauce
In the same skillet, add the remaining butter and mushrooms. Cook until mushrooms are browned. Pour in Marsala wine and chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and reduce for about 5-7 minutes.

Finish the Dish
Return the veal to the skillet and cook for an additional 2-3 minutes until heated through. Sprinkle with fresh parsley before serving.
Roasted Potatoes

Prepare the Potatoes
Preheat the oven to 425°F (220°C). In a bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper.

Roast the Potatoes
Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and crispy, tossing halfway through.
