For the Tiramisu

Method

Preparation

  1. 1

    Make the Coffee Mixture

Brew 2 cups of strong espresso coffee and let it cool. Stir in coffee liqueur if using.

  2. 2

    Prepare the Cream Mixture

In a bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Add the mascarpone cheese and mix until smooth.

  3. 3

    Whip the Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.

  4. 4

    Assemble the Tiramisu

Quickly dip each ladyfinger into the cooled espresso mixture (do not soak) and layer them in a rectangular dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.

  5. 5

    Chill and Serve

Cover the dish and refrigerate for at least 4 hours or overnight. Before serving, dust the top with cocoa powder.
