Prepare the Lamb
Preheat your oven to 400°F (200°C). Trim any excess fat from the rack of lamb and score the meat lightly.

Season the Lamb
In a bowl, mix together the Dijon mustard, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the rack of lamb.

Sear the Lamb
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the rack of lamb for about 2-3 minutes on each side until browned.

Roast the Lamb
Pour the white wine into the skillet around the lamb. Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest and Serve
Remove the lamb from the oven and let it rest for at least 10 minutes before slicing. Serve with the pan juices drizzled over the slices.
